Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Prepare Apple Filling: In a skillet, melt the butter over medium heat. Add the diced apples and lemon juice, cooking until the apples are slightly softened, about 5 minutes.
Season and Sweeten: Stir in the brown sugar, cinnamon, nutmeg, salt, and pepper. Cook for an additional 2-3 minutes until the sugar has dissolved and the mixture is caramelized. Remove from heat and let cool slightly.
Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thickness. Use a round cutter or a knife to cut out circles of dough, about 4-5 inches in diameter.
Fill Hand Pies: Place a spoonful of the apple mixture onto one half of each dough circle, leaving a small border around the edges. Top with a sprinkle of crumbled blue cheese.
Fold and Seal: Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, and then crimp with a fork to create a decorative edge.
Egg Wash: Brush the tops of the hand pies with the beaten egg to create a golden finish when baked.
Bake: Place the hand pies onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp.
Serve: Allow the hand pies to cool slightly before serving. Enjoy them warm as a delicious appetizer or snack!
