Sweet Potato Pie

Ingredients 1 (1 pound) sweet potato, with skin ½ cup butter, softened 1 cup white sugar ½ cup milk

2 large eggs ½ teaspoon ground nutmeg ½ teaspoon ground cinnamon 1 teaspoon vanilla extract 1 (9 inch) unbaked pie crust

Directions Put the entire sweet potato in the pot, add water to cover, and heat until it boils. Boil for 40–50 minutes, or until a fork inserted into it comes out tender.  

Turn the oven on to 350 degrees Fahrenheit (175 degrees Celsius). After taking the sweet potato out of the pot, rinse it under cold water. Take off and throw away the skin.  

Split the flesh of the sweet potato and transfer it to a bowl. Using an electric mixer, thoroughly incorporate the butter.  

Mix in the vanilla, nutmeg, cinnamon, milk, and eggs, beating on medium speed until smooth. Over the unbaked pie shell, pour filling.  

Bake for 55 to 60 minutes, or until a knife inserted in the center comes out clean, in a preheated oven. Before serving, take out of the oven and allow it cool.
