In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
Add the melted coconut oil or vegetable oil, maple syrup or agave nectar, and vanilla extract to the mashed bananas. Mix well.
In a separate bowl, whisk together the flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
Pour the batter into the greased loaf pan and smooth the top with a spatula.
Bake in the preheated oven for approximately 60-70 minutes or until a toothpick inserted into the center comes out clean. Baking times may vary, so start checking around 50 minutes.
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
